Guest guest Posted May 25, 2007 Report Share Posted May 25, 2007 Here is a great picnic recipe, no dairy so it can handle the heat! In parenthesis I have commented on what I did differently. Balsamic Green Bean Salad INGREDIENTS - 1 pound fresh green beans, trimmed (I used frozen havot verts) - 2 tablespoons chopped shallots (I used leeks) - 2 tablespoons chopped garlic - 1/4 cup balsamic vinegar (I used half balsamic and half cider) - 1/4 cup olive oil DIRECTIONS 1. Place green beans in a large saucepan. Fill with enough water to cover green beans, and bring to a boil over high heat. Reduce heat to medium low, and simmer 10 minutes. Drain, and let cool. (I ice bathed them to stop the cooking) 2. In a bowl, stir together shallots, garlic, balsamic vinegar, and oil. Pour over green beans. Cover, and refrigerate at least 1 hour. Serve cold.
