This is how I make mine.

Cajun Basic Roux

 

1 cup whole butter

1 cup flour

 

Melt the butter in a sauce pan or large iron skillet

and combine flour slowly, keep the flame low, stir and

let cook until rouz beomes brownish and thicken.

Give it time, don't hurry it along.
