Oat Shortcakes Ingredients: 1 cup Butter - softened 3/4 cup Brown Sugar 1 teaspoon Vanilla 1 1/2 cups all purpose Flour 1/2 cup McCann's Quick Cooking Oatmeal 1. Place the butter, brown sugar and vanilla in a mixing bowl and beat until light and fluffy. 2. Gradually add the flour and the oatmeal and stir until a soft dough forms. 3. Divide dough into 3 balls. Place on a baking sheet and pat each into a circle approx 5-6 inches in diameter. 4. Divide each circle into 8 wedges. 5. Bake in a preheated oven at 325° for 12 – 15 minutes. 6. Cool on a wire tray. Break apart into wedges. Serves 24; serving size: 1 shortcake Nutritional Information: 123 Calories; 8.4g Total Fat; 5.1g Saturated Fat; 0.1g Sodium; 10.5g Total Carbohydrate; 1.3g Protein. ***** Savory Potato Bake Ingredients: 1.5 – 2lbs Potatoes 4 Spring Onions – chopped 2 tablespoons Parsley – chopped Black Pepper 1 cup Low Fat Soft Cheese 1/4 cup Gruyere Cheese 3/4 cup McCann's Quick Cooking Oatmeal 1 teaspoon Paprika 2 Eggs - separated 1/3 cup McCann's Steel Cut Oatmeal Method 1. Heat oven to 375°F. 2. Slice potatoes and arrange in an oiled ovenproof dish. 3. Sprinkle with onions, parsley and pepper. 4. Beat together the cheeses, quick cooking oatmeal and paprika. 5. Season with pepper and stir in the egg yolks. 6. Whisk the egg whites until stiff, then fold in the cheese mixture. 7. Spread over the potatoes and sprinkle over the steel cut oatmeal. 8. Bake for 30 – 35 minutes until the top is golden brown. Serves 6; serving size: 1 serving Nutritional Information: 260 Calories; 9g Total Fat; 3.7g Saturated Fat; 0.2g Sodium; 30.2g Total Carbohydrate; 14.6g Protein. ***** Breakfast Booster ngredients 1/2 Cup McCann's Quick Cooking Irish Oatmeal (toasted if liked) 1 carton Yogurt (flavour of choice) 1 cup Fresh Fruit Honey to drizzle Preparation 1. In a tall glass, layer oats, yogurt and fresh fruit and repeat with a second layer. Top with oatmeal and drizzle over honey on top and serve. I'd like to hear how you like these if you try them. Breakfast Booster ngredients 1/2 Cup McCann's Quick Cooking Irish Oatmeal (toasted if liked) 1 carton Yogurt (flavour of choice) 1 cup Fresh Fruit Honey to drizzle Preparation 1. In a tall glass, layer oats, yogurt and fresh fruit and repeat with a second layer. Top with oatmeal and drizzle over honey on top and serve.
