This enzyme's reaction on protein (for example, human flesh) is such that plantation workers and pineapple packers have to wear gloves to protect their hands. The enzyme's properties are destroyed by cooking, but when eating fresh pineapple you might consider eating it quickly, before it starts to eat you! Need a vacation? I have checked the BBC website and this is the link that I found: http://www.bbc.co.uk/dna/h2g2/A10697132 Bromelain is an anti-inflammatory which is used for reduction of swollen joints and gout and is also currently being tested for possible anti-cancer properties. It says that if you are constantly working with pineapples they will eat away your fingerprints but you would need to be working with them day in day out. Chopping one up for your fruit smoothie will not have this impact and eating it will be beneficial to your health.
