Guest guest Posted May 15, 2007 Report Share Posted May 15, 2007 Vegetarian/Vegan friendly recipe Lentils and Rice 2 cups lentils - uncooked 1 cup Basmati rice-uncooked 1 med. onion chopped 1 med. carrot thinly sliced 2 celery stalks chopped 3 garlic cloves crushed 3-4 cups vegetable stock *** 2 Tabs. oil ( is used Smart Balance ) Salt and pepper to taste Lightly brown lentils, rice and onion in oil. Add vegetable stock ,and vegetables Simmer until veggies and grains are tender, and liquid is absorbed. Apx.cooking time apx.20-30 min. *** Because I live at a very high altitude more liquid and a longer cooking time is required.
