Vegetarian/Vegan friendly recipe

 

 

Lentils and Rice

 

2 cups lentils - uncooked

1 cup Basmati rice-uncooked

1 med. onion chopped

1 med. carrot thinly sliced

2 celery stalks chopped

3 garlic cloves crushed

3-4 cups vegetable stock ***

2 Tabs. oil ( is used Smart Balance )

Salt and pepper to taste

 

Lightly brown lentils, rice and onion in oil.

Add vegetable stock ,and vegetables

Simmer until veggies and grains are tender, and liquid is absorbed.

Apx.cooking time apx.20-30 min.

 

*** Because I live at a very high altitude more liquid and a longer

cooking time is required. I use 4 cups of liquid for this recipe. 3

cups will be adaquate for most of you.
