I'll have to try them roasted. I have always boiled them in their skins, then slipped off the skins when beets are tender and cut into chunks. I add a little water. If I have the green tops off of them, I add them at this point to the beet chunks, along with a little cooking oil and tiny bit of salt. I dook them about 10 minutes or less. Yummmmmmmm. I love radishes, just trimmed up and sprinkled with a little salt or in salads. Don't you hate it when you get an extra hot one......... Yuck.
