My daughter breaded(with Italian bread crumbs) and fried some Loma Linda Tender Bits today... Oh were they ever good. Give those a try. Sometimes I bake that Fri-Chik, just taking it out of the can, leaving it moist from the broth and baking on a sprayed baking sheet. Yumm Love it in a rice casserole too and so many things. Oh with those black beans I also love to make black bean salsa. My recipe is in the files. Well Diane you have given me the encouragement to go ahead and try a mixture of olives from the olive bar at the grocery store. I keep meaning to, but somehow haven't yet. They all look so good. Olives are a big favorite of mine. The label at the olive bar says they are Moroccan. They are dry and very small and shriveled and don't come in any brine. They have an almost metallic aftertaste. Aren't you sweet. Our daughters are both quite good cooks. They are 13 and 16. We enjoy being in the Kitchen together, but sometimes they cook the entire meal and that is a treat. They love to find new recipes to try. I'm glad I discovered balsamic vinegar, thanks to this group. I had never tried it before. I had used Rice wine vinegar, red wine vinegar, apple cider vinegar, and white vinegar, but never the balsamic vinegar before. I like it too...... Thanks to all of you that suggested it. I still have yet to try it on some strawberries as someone said they had done here. I used it yesterday to marinate the diced sweet onions that I put in some potato salad and some black bean salad that I made. Yummmmm. I think next week will also be greek week. I get on food kicks & eat the same thing for lunch for many days. I'll have to try the breaded & fried technique like your daughter did - that sounds yummy.
