Guest guest Posted May 14, 2007 Report Share Posted May 14, 2007 Potato Apple Hash 1/4 cup olive oil 1 medium onion, peeled and diced small 4 large Yukon Gold potatoes, pared and diced small 3 Macintosh apples, pared, cored and diced small 2 tbsps. butter 1 tbsps. fresh thyme leaves salt and pepper to taste In a large non-stick frying pan, heat olive oil and sauté onions over medium heat until translucent. Add potatoes and sauté until partially cooked. Add apples, butter and thyme; salt and pepper to taste. Cook until potatoes are tender. Makes 6 to 8 servings.
