Guest guest Posted May 13, 2007 Report Share Posted May 13, 2007 Something my mom used to do for the scouts was to make her own mixes and store them in empty coffee cans. One was for her bean soup. One combination included black eyed peas, orange and green lentils, black beans, split peas and pintos. She just threw in whatever she had in whatever combo. On the outside of the can would be a label that might say something like this: Pea-Bean Soup Soak 1 cup beans for several hours, discard water. Add 4 cups water and simmer for 3 hours. Add 1/2 cup chopped onion, salt and pepper to taste. Add water to cover beans by 2 " . Simmer an additional hour. Add 1/2 cup rice and water to cover by 2 " . Simmer until tender. If there is any mixture that will be used over and over, that would go in a can with instructions. Let's say you are going to make cinnamon rolls one day and coffee cake another, and they use the same dry ingredients, she combines them. The label: Cinnamon Rolls Combine 2 cups mix with.....and bake....etc. Coffee Cake To 1 cup mix, add.....and bake....etc. She used bouillon cubes, but I find them too high in salt and too low in taste. I prefer to use Better than Bouillon, a paste that comes in a jar. It comes in several flavors, including vegetable.
