Bean Hole Beans 6 cups navy beads 2 small onions, minced 2 tsp. dry mustard 8 oz. Worthington Wham, cut into small pieces. *Wham is a vegetarian alternative for Ham and come frozen already slice or in a log* 3 tsp. salt ¼ cup brown sugar Pinch of baking soda ½ cup molasses 1. Wash beans and soak in water, preferably overnight. 2. Cook beans over low heat for 1 hour. 3. Grease Dutch oven or kettle and sprinkle a layer of onions on the bottom. 4. Pour in half of the beans with some of the liquid in which they were parboiled. 5. Sprinkle half of a mixture of soda, mustard, salt, and brown sugar over the beans. 6. Add a layer of diced salt pork and rest of the onions. 7. Pour in the remainder of the beans and sprinkle over this final layer the remaining dry ingredients and Wham. 8. Pour the molasses over all. The beans should be just covered with liquid. 9. Place a tight-fitting lid on the kettle. It should fit securely, for the beans will dry out if the steam escapes. 10. Cook in bean hole 4-6 hours. *Wham can be purchased at some healthfood stores in the frozen section at at Adventist Book Centers Worldwide(they have a large natural foods health store included in them.)
