Kidney Beans and Spaghetti

 

4 cups dried kidney beans

4 tsp. salt

2 cups spaghetti, uncooked

4 cups stewed tomatoes (2 16 oz. cans)

1/3 cup fat

1/3 cup flour

1/2 tsp. pepper

 

1. Wash and soak the beans overnight.

2. Add 2 tsp. of salt and cook beans until tender (about 1 to 1 1/2

hours).

3. Break the spaghetti into pieces about 1 inch long and cook in

boiling salted water until soft (about 10 to 15 minutes) then drain.

4. Make a tomato sauce as follows: melt the fat, add the flour, and

cook until bubbling. Add the tomatoes and cook until thickened.

5. Mix the spaghetti and beans together.

6. Add seasoning and sauce, and serve hot.
