Guest guest Posted May 12, 2007 Report Share Posted May 12, 2007 Kidney Beans and Spaghetti 4 cups dried kidney beans 4 tsp. salt 2 cups spaghetti, uncooked 4 cups stewed tomatoes (2 16 oz. cans) 1/3 cup fat 1/3 cup flour 1/2 tsp. pepper 1. Wash and soak the beans overnight. 2. Add 2 tsp. of salt and cook beans until tender (about 1 to 1 1/2 hours). 3. Break the spaghetti into pieces about 1 inch long and cook in boiling salted water until soft (about 10 to 15 minutes) then drain. 4. Make a tomato sauce as follows: melt the fat, add the flour, and cook until bubbling. Add the tomatoes and cook until thickened. 5. Mix the spaghetti and beans together. 6.
