I eat a lot of pasta and beans and fake " meats " made of soy. I especially like sausage substitutes. I also eat a lot of cheese and eggs, but I am starting to phase them out because I want to become vegan. There are tons of recipes in the files here. It just takes practice to find alternatives to animals flesh foods. Eliminating meat, poultry and fish from my diet has greatly improved my gastro-intestinal system, so I think you are making the right decicion for your health. I wish you the best. Karen in PA Hi to all, Thanks for allowing me to join. I must say that I KNOW NOTHING about being a vegetarian except that I believe that I will be HEALTHIER for it. I come from a long line of " meat eaters " having been raised in a rural south Texas town where every summer we would butcher a calf or two so that we would have meat for the winter. So now I am grown, am 49 years old and am on a ton of medicine because I have such severe acid reflux that my GI doc says I also have Barrett's Esophagus. For those of you who are unfamiliar w/the term, it is high possibility of precancerious membrane in the esophagus. So, am trying to seek out things that will keep me alive just a little while longer. My first really dumb(I think) question is: On veggies, I usually don't have time to have raw or fresh all the time. But I've also heard that cooking them takes all the nutrients out of them. What is the best way to eat veggies? Plus, I'm not/never been a real big fan of veggies, so will have to work my way into this veggie thing. And, what else can I eat? I am sure that the group have lists of foods/recipes etc to look at. I just purchased my first juicer and have no clue how to make anything.
