I do have a favorite recipe from one of my cookbooks for a mothers day brunch. It is " cheese " blintzes with blueberry sauce. You just make a basic crepes recipe and use either cottage cheese or mash up a brick of tofu and add honey and lemon juice. Then prepare the crepes. Make a blueberry sauce with blueberries, lemon juice, sugar and corn starch. Place 2 tablespoons of the cheese mixture on each crepe and roll up cover with the berry sauce. My favorite Mothers Day activity is doing nothing. It is one of the days that I am not required to do anything around the house. The children and husband take care of everything.
