My mom actually started cooking late in life, so we basically

learned at the same time. She usually makes yummy veggie soups when

I am around. Here is one that I like a lot, great in the summer

when your garden might be overproducing zuchinis. Also, an

advantage of this soup is that you can use those overgrown

zuchinnis, but I recommend peeling them (you know, the ones you

forget in the vine and they end up being 2 feet long or so?)

 

Cream of zucchini (Vegan)

This can be served hot or cold.

 

2 large or 1 giant zucchini

4-5 medium potatoes

2 large yellow onions

4-5 bay leaves

Olive oil to sautee

vegetarian broth (1 quart)

silken tofu (20 oz)

2 tbsp miso

1 tsp white pepper

olive oil for sautéing

add salt to taste

 

Coarsely chop onions, potatoes and zucchinis, sauté in hot olive oil

and add bay leaves – sauté for a few minutes and add broth. Cook

until all veggies are tender and allow to cool. Add the rest of the

ingredients, blend to a smooth thick soup and add white pepper. You

can use a regular blender, a food processor, or even better, those

portable blender sticks that you insert right into the soup pot.

Adjust the consistency adding more broth or water if too thick.

As far as the other questions, i am not a mother so I will not be

doing anything to celebrate. I know I could call MY mother, but she

lives in another country and they celebrate mother's day a different

day. Maybe i should call her anyway? sure, this sounds nice.
