I really liked this and so did my husband but my children did not since everything was smothered in BBQ sauce. The only thing that bothered me was there was a lot of cooking on the stove top. But I would make it again. BBQ Seitan and Layered Vegetables 2 T olive oil 1 large onion cut in half moons 2 large Yukon Potatos 1/4 inch slices 1 red pepper- seeds removed cut in rings 1 large carrot shredded 1 zucchini sliced thin 12 ounces seitan cut in slices 1 t. dry mustard 1/4 cup molasses 6 oz can of tomato paste 1/4 c. soy sauce 2 T cider vinegar 2 T light brown sugar 1 c. water 1. Heat 1T of olive oil and saute onions until slightly browned remove and place on bottom of slow cooker 2. Place the potatoes now in the skillet and cook until brown and place on top of onions 3. Place by layers peppers, carrot and zucchini. 4. Fry up seitan with last T of olive oil and place on top of veggies 5. Make up BBQ sauce and pour on top of everything.
