Guest guest Posted May 8, 2007 Report Share Posted May 8, 2007 Southern Stir Fry 1 c. cooked rice 1 c. frozen whole kernel corn 1/2 t. dried thyme 1 can Black Eyed Peas, drained 2 c. spinach leaves Spray 12 in. skillet w/nonstick cooking spray; heat over medium heat. Cook all ingredients except spinach, stirring occasionally, until hot. Stir in spinach. Cook until spinach begins to wilt. ----------- This is such an easy recipe. I got it from Betty Crocker's Good and Easy Cookbook. This is not a vegetarian cookbook, but I have found a lot of great tasting, simple recipes in there without meat.
