Guest guest
Blue Cheese Stuffed Mushrooms. 1 lb. fresh mushrooms with medium-large caps 1 8 oz. pkg. cream cheese, softened 1/2 cup sour cream 2 tsp. onion powder 2 oz. blue cheese, crumbled 1/4 cup chopped walnuts or pecans. Clean the mushrooms and remove the stems. You can serve the mushrooms raw or cooked. If cooked you should place them on a cookie sheet and spray with a nonstick cooking spray and bake at 375 for about 10 minutes or until tender. Let cool. In a bowl combine the cream cheese, sour cream and onion powder. Beat until smooth. Crumble blue cheese into the mixture. Spoon mixture into the caps piling the filling high. Sprinkle with chopped nuts. serve chilled Note: these are delicious with cooked fake bacon! You simply crumble the soy bacon and mix together with the other ingredients before putting into the mushroom caps.
