My name is Kim and I live in Ann Arbor MI - not a U of M fan...another story1 I was watching a show the other day where a doctor was discussing how he helped obese, diabetics with hypertension get off of their drugs, slim down and become healthy again. How did he do it...not exercise...he switched them to a vegan diet! We eat a lot of vegan meals now but we also are meat eaters. However we have begun the process of eliminating meat from our diet. I want it to be a process not a cold turkey kind of thing. Our biggest fear is that we won't feel full if we don't eat meat/milk/eggs at all. I guess I am going to look to this group to put great recipes on here that fill you up and make your tummy happy. I would love to hear suggestions from others as to how to switch from meat/poultry/eggs/milk over to a better diet. The good news is that where I live there are endless possibilities for food!
