Hubby and I were brainstorming for what else to do with them. He came up with this idea which I wasn't too crazy about, but I'm up for experimenting. If he comes up with something, it is always kid friendly...LOL. I did manage to sneak in some zuchini... Stephanie Kid Friendly " pizza " Rice Balls 2 1/2 cups sushi rice (uncooked) 5 cups water small to medium jar of favorite spaghetti sauce (depending on how much sauce you like) 2 cups shredded mozzarella (or vegan sub) 8 medium (about 1 inch) size veggie meatballs ( I LOVE gardenburger Mama Mia Meatballs) 2 medium sized zuchini grated Directions: *Rinse rice until water runs clear *Soak rice in water for 30 minutes *Drain *Add 5 cups water and rice to large pot with tight fitting lid *Bring to boil, stir once, cover, reduce heat to simmer and cook for 20 minutes *Remove rice from heat, let sit covered, in pot for 10 minutes *Uncover, stir rice and allow to cool until you can handle it safely *Mix zuchini into rice *Preheat oven to 350 degrees *Cook meatballs *Wet hands *Get a large spoonful of rice in palm *Make indentation and put some cheese into it *Top with meatball and more cheese *Get another spoonful of rice and top what is in your hand *Make sure both hands are wet, roll mixture into a ball *Place into large baking pan *Repeat until all ingredients are used up *Top rice balls with spaghetti sauce *Cover with foil and bake for 30 minutes, just enough to melt cheese in the middle of the rice balls NOTE: Serve with a salad fo a complete meal Quote Link to comment Share on other sites More sharing options...
