You can also do a simple stir fry with veggies and eat

that for a few days. I use up all my vegetable odds

and ends with a soup or stir fry. Soup is very easy

too. Please take a look in the cheap eats folder too

as well as the various vegetarble recipe folders.

Congrats! I know you were having a difficult time at

first with almost no support.

One thing that I do is on Sunday I cut up a bunch of fruit and cover it with

orange juice so I have a fruit salad for a few days. Freeze half of the

fruit salad in small containers or ice cube tray and use with a blender for

fruit smoothie. Add almonds for protein.

 

Find a good vegetable soup you like and then add some fresh vegetables when

you have them.

 

Freeze bananas and put them in a blender with soy milk. You can peel the

bananas first if you are going to use them soon, If you want to stock up

then don't peel the bananas just freeze them but let them sit out for a

minute to thaw and then use a sharp knife to peel.

 

Add a handful of almonds or Walnuts to steamed vegetables, Pasta, fruit

salad, soup, and I have even added almonds to egg salad (if you eat eggs).

To help veggies keep longer, you need to take some time once you buy them to

prepare them for the week.

 

In general, leave the vegetable whole for as long as possible before using it.

It's ideal to buy veggies within a day or so of using them, but I know that's

not always possible.

 

Don't wash berries or potatoes until you are just going to eat them. Potatoes

and onions should be stored somewhere cool, dark and dry, like a basement.

 

Lettuce needs to be washed and either

1) thoroughly dried (I place mine between layers of towels for a couple hours),

or

2) torn and thrown into a large bowl of ice water which you need to cover and

keep chilled, just taking out the pieces you're using

 

If you chop carrots, they need to have some moisture or they'll dry out. Try

adding a tablespoon or two of water to baby carrots.

 

I chop up broccoli and put them in ziplock baggies, pushing out all the air.

 

What vegetables are you having trouble with specifically?
