Guest guest Posted May 3, 2007 Report Share Posted May 3, 2007 * Exported from MasterCook * African Vegetable And Fruit Stew Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- peeled 2 red chilies 225 grams potatoes 225 grams carrots 4 tablespoons oil 2 garlic cloves -- crushed 1 teaspoon grated fresh root ginger 1 teaspoon ground cumin -- coriander and turmeric 1 teaspoon fennel seeds -- lightly crushed ¼ tsp each ground cinnamon -- cardamom and cloves 25 grams each dried pears and apricots -- diced 1 pint vegetable stock 225 grams green beans -- trimmed 2 tablespoons mango chutney 1 tablespoon lemon juice 25 grams cashew nuts -- toasted Chop onion, deseed and chop chilies, peel and dice potatoes and carrots. Heat oil in large deep frying pan, add onion, garlic, chilies and fry 5 mins then add spices and fry further 2-3 mins. Add potatoes, carrots and dried fruit and stir to coat with spice mixture.
