Sweet 'tato chili

So I got creative cooking tonight, and it came out

tastey :) My BF starts to worry when I get a lot of

cans in the pantry, so I cleaned house a little with

this recipe.

 

I found it somewhere online, only the recipe had 4

cans of beans in it, along with more of everything

else, so I changed things a bit, added a couple of

things, and volia! I think the orginal recipe would

have fed about 8 people.

 

Sweet 'tato Chili, Libby style

 

*about 2 tbsp olive oil

*a small handful of dried minced onions (the recipe

called for a red onion chopped, but I hate dealing

with them, so I just used my dry ones, and it tastes

good too!)

*a spoonful of diced garlic (big spoon if you like it

like me)

*1 sweet potato, cut into 1/2 inch chunks

*zest and juice of one lime

*1 can of diced tomatoes

*1 can of black beans (rinsed and drained)

*1 roasted red bell pepper, diced

*about 1/2 of a green chili roasted, diced (I was

roasting chilis for the BF, and didn't have the

jalapenos that the recipe called for, so I used what I

had on hand)

*1/2 tsp cumin

*1/2 tsp chili powder

*1/2 heaping tsp of coco powder

*part of a can of chilis in adobe sauce (if you like

it hot, toss in the whole thing, but I just scooped

out 2 chilis and chopped them up, and stuck the rest

in the freezer.)

 

Toss the oil in a big pan/pot (what ever you are

cooking it all in). Heat on medium, add the garlic,

dried onions, red pepper, and cook it for a little bit

(I did until the onions got a little softer)

 

Dump in the sweet tato chunks and lime zest. Cook on

med/low heat until the tatos get kind of soft (20 mins

or so, just keep poking them with a fork to see how

soft, but not too soft, you don't want mush....well

maybe you do, but I didn't)

 

Dump in the tomatoes, black beans, lime juice, green

chili pepper, chili in adobe sauce and spices. Cover

and cook until your tatos are soft enough to your

liking, and all those lovely flavors and smells have

mingled. Mine took about another 10 mins.

 

Serve how you like your chili, maybe with some corn

bread (not for me, that would be a no-no on the South

Beach diet list), sour cream, cheese, and cilantro.

 

If you have not tried the chilis in adobe sauce, you

are missing out. Took my 26 years to discover the joys

of them! They have this wonderful sweet smokey smell

when you cook with them, and add a great taste. Only

thing is yes, they can be a wee bit hot, so use to

your taste. My BF loves the hot stuff, me, not so

much.
