Guest guest Posted April 30, 2007 Report Share Posted April 30, 2007 I'm so happy you liked this recipe. It's a favorite of mine and everyone I serve it to. You can mix and match this recipe. I like to add a minced shallot, the grated carrot is good in it too. You can also thaw some chopped spinach and press the water out and toss in. The sweet red peppers are good finely diced or you can use bell pepper if you like it. And to make it look like confetti dice up some of the yellow and orange pepper too. You can also make a little thin rice crust bottom and fill with the mixture, that's good too. My sister makes it with cayenne pepper and a minced jalapeno, kind of gives it the south western flare.
