Fresh Apricot-Date Cobbler 2 3/4 cup mashed fresh apricots, pitted but not peeled, 20 to 25 small apricots 1 cup apple juice 1 cup pitted dates 1 teaspoon cinnamon 1/3 cup oatmeal 1/3 cup dates 1/2 teaspoon cinnamon butter or marg. Preheat oven to 350 degrees and spray baking dish. Spread apricots evenly in the bottom of a 6 x 10-inch baking dish. Pour apple juice in a blender and add dates. Puree, then add the 1 teaspoon cinnamon. Pour over apricots. Make topping by grinding oatmeal, dates and the 1/2 teaspoon cinnamon in blender, sprinkle topping over apricot mixture, dot with butter and bake 25 minutes, cover dish with foil during last 7 minutes of baking.
