Fig And Goat's Cheese Pizzas

1 pack pizza base mix -- (154 g )

extra virgin olive oil -- for greasing and drizzling

75 grams grated mozzarella

75 grams soft goat's cheese -- crumbled

plain flour -- for dusting

4 tablespoons passata

2 ripe figs -- thinly sliced

1 teaspoon fennel seeds

 

Make up the pizza base mix in a large bowl according to the packet

instructions. Put the dough into an oiled bowl, cover and leave in a warm

place for 30 minutes, until doubled in size.

 

In a bowl, mix together both the cheeses and season with freshly ground

black pepper. Set aside.

 

Preheat the oven to 200C/Fan180C/Gas 6 and pop 2 large non-stick baking

sheets inside to heat up. Punch the risen dough to knock out the air, then

knead on a lightly floured surface for a few minutes, until smooth. Cut

into 4 equal pieces and roll out each piece to a thin circle, about 12cm

diameter. Carefully place onto the hot baking sheets, spread each with 1

tablespoon passata then dot over half the cheese mixture.

 

Arrange the fig slices on top of each pizza and top with the remaining

cheese. Drizzle with a little oil and sprinkle with the fennel seeds. Bake

for 15-20 minutes, swapping the trays around halfway, until the bases are

golden and the cheese is bubbling. Serve immediately with a mixed salad.
