Classic Black Beans & Rice 2 tablespoons olive oil 1/2 cup finely chopped onion 1/4 cup finely chopped green pepper 2 garlic cloves finely chopped or put through a press 1 can black beans, undrained 1 package Sazon Goya without annotto 1 tablespoon red wine (cooking wine or red wine vinegar also works) 1/2 cup water 1 tspn oregano Dash of pepper and salt to taste Saute' onions, pepper and garlic until soft (about ten minutes). Add remaining ingredients and simmer on low for about twenty minutes Serve over rice of choice. Leftovers (if there are any, it's that good) can be mixed together and made into burritos the next day. Mix in a little shredded cheese, heat and top with sour cream, salsa and chopped avocados.
