Help!!!! Pet Peeve

I have a question. (I know, again?) Why is it that so many vegetarian

recipes are just full of squash? That's one vegetable (along with lima

beans and chickpeas) that I just cannot stand. I don't like cooked spinach

either but those recipes don't seem to be so prevalent as recipes with

squash. What's the deal? No one else likes squash either so they figure

" oh, the vegetarians will eat it! They're strange anyway! " Is there anyone

else out there who has come across a recipe where squash is an ingredient

and they've found another veggie to substitute for it? I haven't had much

experience with eggplant yet, but that's just because I'm still looking for

a baked or roasted recipe that I think my son & I might like. Anyway, if

you've got a good substitute for squash in some recipes, I'd really

appreciate it. Thanks in advance.

I hear you. I can live with squash but never have any on hand. Myself? I hate

green- yellow- red bell pepper. It seems to me that the number of recipes with

bell peppers in them far exceed the fairness test. :-)

 

It does help me sort email into the correct folder if I first do a search on

" green pepper " when my mailbox is full.
