Brown Rice and Greens - 3 pts

2 1/2 cups water

1 cup brown rice

2 cups baby spinach or arugula

Salt & freshly ground pepper to taste

 

 

 

 

Bring water and rice to a boil in a medium saucepan. Cover, reduce

heat to low and simmer, covered, until tender and most of the liquid

has been absorbed, 40 to 50 minutes. Stir spinach (or arugula) into

the hot rice, cover and let stand for 5 minutes. Season with salt and

pepper.

 

NUTRITION INFORMATION: Per serving: 170 calories; 1 g fat (0 g sat, 0

g mono); 0 mg cholesterol; 36 g carbohydrate; 4 g protein; 3 g fiber;

166 mg sodium; 116 mg potassium.

ChupaNote: I also stirred in a palm-ful of red bell peppers, a palm-

ful of shredded carrots, and sprinkled with seasoned Japanese rice

vinegar and a sprinkling of red pepper flakes.
