Guest guest Posted April 26, 2007 Report Share Posted April 26, 2007 Just reminiscing about California and thinking of our upcoming move back there...thought about those delicious garlic fries that I first encountered at the Santa Cruz boardwalk...had to have some. While I was at it, I roasted a head of elephant garlic, a tribute to Gilroy...hehe Stephanie I know you are going to ask, so here it is... Garlic fries: Cook up a bag of your favorite fries or make your own from scratch While they are still warm, top with a mixture of: 2 tablespoons Olive Oil 1/2 cup freshly minced garlic 1/4 cup sea salt 1 tablespoon black pepper Mix thoroughly *************************************************************** Roasted Garlic: Whole garlic bulb Olive Oil Salt Pepper * Preheat oven to 425 degrees (I used my toaster oven) *Peel as much of the papery skin off the garlic as you can *cut about 1/4 inch off the top of each clove *place in small baking dish *drizzle with olive oil *season with salt and black pepper *cover tightly with foil *bake for 45 minutes Smear on fresh sourdough bread or eat right out of the skin, depending on how brave you are..LOL NOTE: this is for the average size head of garlic, for the elephant garlic, cook for 1 hour.
