Just wanted to let you all know this dish freezes very well! I had so much left over from when I first made it, I put the rest in the freezer. I thawed it in the fridge and then heated it in a pan on top of the stove while I cooked some brown rice. The first time, I served it over fettucine noodles and this time, I drained *a little bit* of the liquid and mixed it together with brown rice in a large bowl...SUPER YUMMY!!!
