They make a great ending to a holiday dinner or supper. Make a big batch because they sure do go fast!! What you need: 1 package (6 oz.) of semi sweet chocolate chips 3 tablespoons of butter or margarine, divided 1 cup of powdered sugar 1/8 teaspoon of peppermint extract 2-5 drops of green food coloring 3-4 teaspoons of milk What you do: In a 2-cup measure cup combine chocolate chips and 2 tablespoons of butter. Microwave at high for 45 seconds to 1 1/2 minutes, or until the chips are soft. Stir until smooth. Spread in an 8 x8 inch baking dish. Chill about 1 hour, or until set. In a medium bowl combine the sugar, 1 tablespoon of butter, the peppermint extract, and food coloring. Beat with electric beater adding milk as needed, until smooth and stiff frosting consistency. Spread on chilled chocolate layer. Chill 3-4 hours, or until firm. Cut into about 1 1/2 inch squares. Store in the refrigerator, tightly covered, no longer than a week.
