Guest guest Posted April 21, 2007 Report Share Posted April 21, 2007 Curry and Veggies Rice 1 cup medium-grain rice 1 1/2 tbsps. vegetable oil 1 clove garlic, chopped 1 small onion, chopped 1/2 cup bell pepper, chopped 1 carrot, small, chopped 1-2 tbls. soy bacon bits chopped 1/2 cup celery, chopped 1/2 cup, mushrooms, cooked and chopped 1 tsp. curry powder 2 cups water Saute' garlic, onions, celery, and carrots for 2 minutes in a little oil. Add rice and saute' it for 2 more minutes. Add water, bell peppers and mushrooms with salt and curry powder. Add 1 tbsp of oil and let cook uncovered until the water starts to evaporate. Stir with a fork to make sure it is not sticking to the bottom of the pan and cover. Cook for 20 to 25 minutes on low heat. To serve, garnish with the bacon bites and voila! Serves 4.
