I have two little ones underfoot while I am cooking, so I try to cook fast. But my usual repertoire is getting very boring. One can black beans, rinsed & drained One can corn, drained A good sprinkling of Spike, Natures Seasoning, or other seasoning blend Combine, pop in the microwave for a couple of minutes, and serve. If I'm feeling fancy I serve it on a bed of lettuce. Guest guest Posted April 20, 2007 Report Share Posted April 20, 2007 My favourite quick dinner is couscous, add water, finely choopped herbs, chopped spring onion, finely sliced radish and olives, diced cucumber and avocado, topped off with cubed smoked tofu or feta cheese and sprinkled with the juice of half a lime - 5 minutes and it's done. On days when I'm feeling more adventurous I might add sliced marinated garlic cloves and strawberries to the mix. Guest guest Posted April 20, 2007 Report Share Posted April 20, 2007 Brown rice and mixed seasonal vegetables - pre cooked sweet brown rice (we prepare the rice in advance and then use as needed for the week - keeps in the frig about a week too) - right now we're using out of our garden - Asparagus, and spring mixed greens,(like Kale, Chard, Mustards), Brocolli, Onions, Garlic and Sweet Red peppers. In a large preheated skillet we add a little olive oil and the diced veggies (add the hard veggies first, ie; brocolli, asparagus, onions, garlic and peppers and saute' about 7 minutes or so just until the onions start to turn translucent) and add a little tamari and bragg's for seasoning - then add about a cup or so of the precooked rice (we use 1/2 cup rice per person) and stir the mixture together, then at the end add your mixed prepped greens - stir them into the mixture and let them " steam " with the lid on the skillet for just a few minutes (about 3-4 minutes) or until the greens just start to wilt - the whole thing from start to finish takes no more than 15-20 minutes. This is a big imporovement over the couple feet that was on it a few weeks ago, but I won't be able to get anything out in the garden for about another 4 weeks. I have tomatoes, cucumber, brocolli, cabbage, cauliflower and zucchini and crock necked yellow squash and peppers started in all the windows. Guest guest Posted April 21, 2007 Report Share Posted April 21, 2007 Jen, Pasta with a sauce is a good quick meal. You could use a white sauce, tomato sauce with vegetarian " meatballs " , or pesto. There should be recipes for these sauces, but I just make them up as I go along. You can also use different pasta shapes for variation.
