Heh! Judy :)

 

It is not prickly at all but it certainly has rough ridges, lol :)

I like it when it is ripe and I scoop out the seeds in the centre and cut it

cross-sectional like I have lots of ringlets and then I cut it into halves like

I

have lots of semi-circular shapes.

 

Then I sauteed some onions and garlic and add them.

Finally I just drop in the beaten eggs and garnish with chopped corriander

leaves or spring onions(or both) :)

 

Sure, I season with salt to taste.

 

If I have yellow beans sauce, I don't bother adding the eggs.

 

It is so easy to prepare and I like the slightly bittery taste.

 

Just look at the colour of the seeds when you get a ripe one.

It is covered with what looked like soft " red " tissue :)

How amazing, lol :)
