Guest guest Posted April 19, 2007 Report Share Posted April 19, 2007 Greek Rice with Spinach 1 1/2 tablespoons olive oil 1 large onion, chopped 2 cloves garlic, minced 4 cups chopped, clean fresh spinach 3 tablespoons lemon juice 4 cups cooked long grain rice 1/2 tablespoon minced fresh basil salt and pepper, to taste 1/4 cup crumbled feta cheese In a skillet, add oil, onion and garlic; cook over medium-high heat 5 minutes. Add spinach, lemon juice and rice. Cook stirring frequently, until spinach is limp and rice is thoroughly heated. Toss with basil. Add salt and pepper, to taste. Add crumbled feta before serving. Stephanie here's my version (not much difference) Greek Rice with Spinach 1 1/2 tablespoons olive oil 2 cloves garlic, minced 4 cups chopped, frozen spinach (thawed) 3 tablespoons lemon juice 4 cups cooked long grain brown rice 1/2 tablespoon Italian seasoning salt and pepper, to taste 1/4 cup crumbled feta cheese (I used shredded Parmesan) In a large pan, add oil and garlic; cook over medium-high heat 5 minutes. Add spinach, lemon juice, seasonings and rice. Cook stirring frequently, until thoroughly heated. Plate up, top with cheese before serving.
