Judy - Donnalilacflower Monday, April 16, 2007 6:15 PM quinoa question Tracy Quinoa is fantastic. Yes, you will always need to rinse it thoroughly in a mesh strainer. The grains are small so a regular colander won't work. This is a natural bitter coating so insects and birds don't eat the grain as it grows. Not harmful but it sure is bitter. I like to roast the quinoa before I cook it, this will add a nice nutty flavor. After you rinse you can let it sit and toss it a little with a spoon. Roast it in a dry skillet until it browns a bit, has a good roasted aromatic scent and pops, this won't take long. Do you have many black grains in yours? I rarely see them, if so I pick them out.
