Peace, Maureen ------- Kale and Potato Soup Thu, 12 Apr 2007 18:11:41 -0700 (PDT) Felicia Lester <felicia_lester Kale and Potato Soup 1 large onion 2 1/2 cups potatoes 1 to 1 1/2 cups kale 4 1/4 cups vegetable stock 3 cloves garlic 1 tablespoon fresh herbs, chopped 2 tablespoons vegetable oil 1 cup cooked cannelloni beans or butter beans, Peel the onion and chop it roughly. Peel the garlic and crush it. Heat the oil in a large pan and sauté the onion and garlic for 5 minutes. Wash the potatoes and chop into 1/2-inch chunks. There’s no need to peel, unless you want to. Add to the pan and sauté for 5 minutes. Add the herbs and stock. Cover and simmer for 10 minutes. Wash the cabbage and chop it. Add to the soup and cover. Simmer for 10 minutes. Liquidize the soup with a handheld blender or masher, if you prefer. Then add the cannelloni beans or butter beans. Heat through. Serve with chunks of crusty bread. Serves 4.
