ROASTED VEGGIE SPREAD

 

Large bell pepper

1 medium onion, sliced into rings

4 cloves garlic, crushed

1 small zucchini, sliced

1 tablespoon olive oil

8 ounces cream cheese

Kosher salt

Freshly ground black pepper

Challah, foccacia, or pita bread, for serving

 

Preheat oven to 400 degrees F.

 

Toss the veggies with olive oil, spread on a oiled sheet pan (or save the

calories

and line with foil) and roast ~ 45 minutes. Toss every 20 minutes or so while

roasting. After soft remove and cool completely.

 

Afterwards, use a food processor, along with the cream cheese to puree into a

spread. Avoid processing it completely smooth. Season with Seaoning salt/white

pepper. Spread on pita, or challah bread.

Yum.
