Guest guest Posted April 14, 2007 Report Share Posted April 14, 2007 BAKED POTATO SOUP 4 to 6 baking sized potatoes 1 can of vegetable broth 1 packet of Lipton or Knorr’s Vegetable Dip mix ½ package of frozen chopped broccoli Fat-free milk Sour cream Fat free cheddar cheese Peel and dice potatoes in to bite-sized pieces. Cook with the vegetable broth and the dip mix, adding any water necessary to make the pot full enough. When the potatoes are done, remove about half of them to a food processor. Add the broccoli to the pot and cook it while you mash the removed potatoes with enough fat-free milk to make a gravy consistency. When the broccoli is done, add the mashed potatoes to the pot and bring just up to a simmer. To serve, ladle soup into your bowl.
