In fact, my daughter works at a restaurant that is well known in our area for their salsa, and she still prefers mine to the one from her work! SIMPLE SALSA CRUDA 1 pound roma tomatoes or 4 large beefsteak tomatoes 1 medium white or red onion 3 to 4 jalapenos (about the length of your thumb) Lime juice Salt Dice onion in to fairly small pieces. Cut tops off jalapenos and slice lengthwise. Remove the seeds and membranes. Dice jalapeno halves. Cut tomatoes in half crosswise. Using a small spoon (teaspoon size), scoop the seeds out of the tomato. Then slice the tomato and dice it in to similar sizes as the onion and jalapeno. Add a splash of lime juice and about a tablespoon or so of salt, mix together. Serve within 15 minutes for freshest taste. This does store well, and if you like your salsa to be dry, you can drain it since the salt tends to draw juices out of the ingredients. It will usually keep up to 3 days.
