Guest guest Posted April 13, 2007 Report Share Posted April 13, 2007 Banana Carrot Bread 1 cup bananas 1 cup sugar 3/4 cup salad oil 2 eggs 2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon cinnamon 1 cup finely grated carrots 1/2 cup chopped pecans Combine bananas, sugar, oil and eggs in a large bowl. Beat with an electric mixer for 2 minutes or 300 strokes by hand. Sift together flour, soda, salt and cinnamon. Fold into the banana mixture. Stir in carrots and pecans. Spoon into a greased and floured 9x5x2 3/4-inch loaf pan. Bake at 350 degrees for 55 to 60 minutes. Cool in the pan for 10 minutes. Wrap and store overnight before cutting.
