Tofu Pecan Stir Fry

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 leeks -- washed, trimmed and finely sliced

1 teaspoon tamari sauce

2 carrots -- trimmed peeled and cut into fine julienne

strips

1 block smoked tofu -- (225 g ) cut into 2cm cubes

100 grams baby corn -- halved lengthways

3 celery stalks -- trimmed and sliced

3 tablespoons chopped pecans -- (3 to 4)

1 teaspoon sesame oil

1 teaspoon orange rind

 

Heat a large wok, add a little water and then the leeks and tamari. Stir

fry for a few minutes and then add the carrots, tofu and sweetcorn. Cook

for a further 5 minutes.

 

Add the celery, pecans, sesame oil and orange rind. Serve immediately on a

bed of salad leaves.

This looks good and the remaining pack of tofu I have is the smoked

one so I will be making this. Thank you for posting it - would you

believe I actually have this book and never thought to look in it for

tofu recipes.
