Middle Eastern 'Sweet Spice' Brown Rice

 

1 cup black olives

1 cup brown rice

3/4 cup onion, chopped

1/2 teaspoon salt

2 cups hot water

1 tomato, chopped

1 green bell pepper, diced

1/4 cup lemon juice

1 teaspoon ground cinnamon

1 teaspoon cumin

2 tablespoons margarine

1/4 cup pine nuts

 

Cut black olives into wedges. Combine brown rice,

chopped onion, salt, and hot water in a microwave-safe

baking dish.

Cover and microwave on HIGH for 20 minutes, or until

the liquid is absorbed and the rice is tender. Add

chopped tomato, diced green bell pepper, lemon juice,

cinnamon, cumin, and margarine.

Cover and microwave on HIGH for 15 minutes, or until

the vegetables are tender. Mix in pine nuts and the

black olives.

Serves 4.
