Portabella Mushroom Salad

 

1 pound Portabella mushrooms, whole

¼ cup olive oil

1/8 cup balsamic vinegar

½ teaspoon rosemary, minced

½ teaspoon basil, chopped

½ teaspoon oregano, minced

1 teaspoon parsley, minced

1 small clove garlic, minced

1 tablespoon shallots, minced

1 tablespoon Cabernet or grape juice

¼ teaspoon sugar

Salt & pepper to taste

1 pound mixed green lettuces

 

 

 

Directions:

Combine the mushrooms, olive oil, vinegar, rosemary,

basil, oregano, parsley, garlic, shallots, wine and

sugar in a bowl. Toss well to coat the mushrooms and

marinate for 1 hour.

 

Over medium-high heat, sauté the mushrooms with the

marinade liquid. Season with salt and pepper. Stir

occasionally until the mushrooms are browned and

softened, about 15 minutes.

 

Remove from heat. Allow the mushrooms to cool

slightly, then slice mushrooms and serve over the

mixed lettuces.

 

Drizzle the warm dressing over the salad and serve

immediately.
