Guest guest Posted April 11, 2007 Report Share Posted April 11, 2007 BROCCOLI WALNUT TOFU NOODLES RECIPE 12-ounce extra wide curly noodles 1/2 lb. firm tofu, drain & cut in cubes 2 pounds broccoli, steamed, using both florets and peeled stems cut into 1/2-inch slices 1/2 cup chopped walnuts 2 tablespoons olive oil Juice of 1 lemon Juice of 1/2 orange Grated zest of 1 lemon 1/2 teaspoon ground pepper Garnish with chopped cilantro Cook noodles al dente, about 5 minutes. Steam broccoli until tender, 3 to 5 minutes. Heat olive oil over medium-high heat and add walnuts. Saute about 2 minutes with tofu cubes. Combine noodles and broccoli. Add walnut-oil mixture and toss well. Add citrus juices, zest and pepper and toss well again. Garnish with chopped cilantro. Makes 4 servings. Don't be flakey.
