Guest guest Posted April 11, 2007 Report Share Posted April 11, 2007 I made stew/soup for dinner last night and was a bit embarrassed when my husband brought a friend home for dinner. He is our guest regularly, so it was no big deal, but still I would not have made soup had I known he was coming. He raved about it and my husband and I both enjoyed it,too. It was a combination of stuff I had in the pantry, but it came out really good and was crock pot easy. It is also quite nutritious Red Lentiles and Barley 2 TBS olive Oil 1 medium size yellow onion, chopped i small carrot, chopped 1/3 cup minced celery 2 garlic clover, minced 2 medium size all purpose potatoes, diced 1 1/2 cups dried red lentiles, rinsed and picked over 6 cups vegetable stock or water 1 cup hulled barley 1/4 cup minced fresh or 1/8 cup dried parsley leaves 2 bay leaves 1 tsp sea salt 1/8 tsp ground black pepper leaves from a small bunch of Swiss chard, (about 6 cups) Hear oil in a large saucepan over medium heat. Add the onion, carrot, celery and garlic; cover and cook, stirring a few times, until softened, about 5 minutes. Transfer to crock pot and add the potatoes, lentiles, stock, parsley, bay leaves, salt and pepper and barley. turn to high and bring to a boil, then reduce heat to low and cover, stirring occasionally, 4-5 hours. Add more water if necessary and cook until the barley is tender. In a large pot of boiling water, cook the chard until tender, about 5 minutes. Drain, rinse under cold water to cool and coarsely shop. Remove the bay leaves and stir in the chard. Simmer for 5 minutes longer. Adjust seasonings and serve. Don't be flakey.
