I have seen that on tofu packages before and I think it's because it changes the texture and instead of printing that on the label it's easier to say do not freeze. That is good news as I would like to support the company which is local (just a few streets from where I live) and which provides employment and training for people with learning difficulties. http://www.engineshed.org.uk/values_philosophy.htm Yesterday I sliced the marinated tofu, pressed it, coated it in wheatgerm and sesame seeds, sprayed it with low fat cooking spray and baked it at Gas Mark 6/400F/200C for about 20 minutes, turning once. Served it with Basmati rice, broccoli, edamame and frozen peas and topped with an Indonesian satay sauce: 3/4 cup canned coconut milk 1/2 cup natural-style peanut butter, smooth 2 garlic cloves, minced 1 1/2 teaspoons curry powder 1 1/2 tablespoons brown sugar 1 tablespoon lime juice 1 tablespoon toasted sesame oil 1 1/2 tablespoons tamari soy sauce Dash cayenne pepper It was lovely. Today I am going to try one of the other recipes posted yesterday. Thank you for all your suggestions.
