It warmed my tummy and I think I slept better with healthy, soothing soup inside me. Chase Away the Sniffles Miso Soup 1 - 2 tsp olive or grapeseed oil (I used grapeseed) 1 large onion, thinly sliced equivalent amount green leafy vegetable (I used bok choy, stalks and leaves), thinly sliced 4 cups vegetable broth (I used homemade veg broth from my freezer. Mine was a bit sweet, a combination of potatoes, parsnips, carrots, onions, a bit of garlic, and some greens -- don't recall what I threw in there for greens the last time I cleaned out my refrigerator. You could also use 4 cups water and a veggie bouillion of your choice, or just water) 4 tablespoons miso (I used organic mello yellow miso) Triscuits (crackers) In medium soup pot heat oil. Saute onion until it starts to become transparent. Add bok choy (or other green leafy veg with stalk); saute until greens wilt and stalks begin to soften. Add broth (or water + bouillion, or water only). Bring to boil; simmer 10 minutes. Add miso. Slow simmer 5 minutes more. Serve in soup bowl. Float Triscuits on top. The triscuits give the soup a " meatier " texture and add a bit of salt which I think brings out the miso a bit more. I ate 3/4 of the pot before I went to bed last night.
