Guest guest Posted April 10, 2007 Report Share Posted April 10, 2007 Spicy Fig and Ginger Pudding 2/3 cup plus 2 tbsps. dried figs, chopped 1/4 cup glacé ginger, chopped 2 ozs. unsalted butter 1/3 cup plus 3 tbsps. brown sugar 1/4 cup water 2 cups plain flour 1 tsp. ground ginger 1/2 tsp. cardamom 1 tsp. allspice 2/3 cup plus 2 tbsps. milk 1 tbsp. plus 1 tsp. brown vinegar 1 tsp. bicarbonate of soda baking paper foil Grease pudding steamer well (6 cups capacity). Combine first 5 ingredients in a medium saucepan, and stir over heat until butter is melted. Cool to room temperature. Sift flour and spices into a large bowl. Make a well in centre. Bring milk to a boil in a small saucepan. Remove from heat and quickly stir in vinegar and sifted soda. Stir hot milk mixture and fig mixture into flour. Pour mixture into prepared steamer. Cover with greased round of paper, then foil. Secure with string or lid. Place steamer in a large saucepan with enough boiling water to come halfway up side of steamer. Boil 1 1/2 hours or until firm. Turn pudding onto serving plate. Serve hot with extra whipped cream. Serves 6. ______________________________\ ____ Now that's room service!
